The things we got wrong

This page is a log of the mistakes we made—what we got wrong, how we fixed it, and who did the fixing. It’s the only place on this site where we don’t pretend everything worked the first time.

You can use it to judge everything else here. If we’re willing to admit what didn’t work, you can trust that what *did* work was tested, not just wished for.

Three we had to fix

Not every mistake stays hidden. These are the ones that made it out before we caught them—and the ones that taught us the most.

The mistakes we fixed

    Wrong ingredient ratios in the vanilla cake

    The first batch of our signature vanilla sponge used 1/3 cup butter instead of 1/2. It came from a rushed rewrite of a handwritten note, and the recipe stayed live for two months before a reader pointed out the texture was off. We pulled it, recalculated every ratio, and tested the new version three times. Sylvia Escobar caught the error in the original draft but didn’t double-check the final upload.

    Baking times mislabeled as ‘minutes’ instead of ‘seconds’

    The caramel sauce guide said ‘5 minutes’ for the final reduction, but it should have been ‘5 seconds’—or the sugar would burn. It went live for a week before a commenter’s photo of a blackened pot exposed it. We fixed the text, added a warning about watching the pan, and made sure every recipe now includes a ‘watch closely’ note. Sylvia Escobar approved the edit but missed the unit error in proofing.

    A cocktail recipe with impossible ingredients

    The ‘Smoky Maple Old Fashioned’ called for ‘charred maple syrup,’ which we’d never tested. It sat in the drinks section for a month before someone tried it and sent us a photo of their failed attempt. We replaced it with a verified method (lightly torching a maple syrup glaze) and added a ‘tested by us’ badge to every recipe. Sylvia Escobar wrote the original draft but skipped the taste-test step for speed.

  • No ingredient or method is added without a verified source or in-house test (learned from the charred maple syrup fiasco).

There’s a small mistake Sylvia made that never made it here: the first time she baked a cake from scratch, she forgot the baking powder. The batter didn’t rise, but she ate it anyway. That’s when she learned that even failures taste better when you own them.
